I just wanted to report that I'm back from my 9-day tour of Denmark. The tandem and the S&S couplings worked perfectly. The bike fit in a single-bike soft case, so checking it was no problem. The first day into the trip I perfected breaking the bike into two in about three minutes - very handy for jumping on trains to criss-cross Denmark.

Here's a pic of the bike in two on a train in Denmark - secured with good 'ol electrical tape so I can whisk it up and down escalators at the train station.
